Made the Tripel tonight...what an awesome time. Got very close to the specified original gravity...so very happy with that...and had a few brews while brewing, and a few brews while cleaning up, and then a few brews while relaxing. Definitely a good night.
My wife is working today so I am taking advantage of the situation and mashing for an amber ale now. My Levity clone. Of course that means I am drinking a homebrew. Today it is my IPA. I call it Jackrabbit, it has hops! A fine way to spend a Monday holiday.

I agree. I just finished making a batch of Apple Pie.
Drank another Irish Ale (first batch) last night, and the carbonation was perfect. Flavors really mellowed and it was really good. Extremely happy with the first batch.
My Belgian Tripel went crazy during the first week of fermentation...foam bubbling out of the blow off tubing, was really cool to see.
So I bottled my Wit tonight. The clean up is not fun, but it gives me an excuse to tip a few from the previous batch. I knew the previous batch was a bit stronger than normal beer, but it really surprised me how fast they, "snuck up on me." If these get me lit this fast, I wonder what the Belgian Tripel will do to me? Have I said I love this hobby yet?
Just got a text from my father-in-law (We brew together). He just bought a new SS 10 gal. brew pot with tap and a couple more kits. Good times for next weekend.

Im jelous, wish my father in law and I could do that. He drinks wine coolers and we have very little in hobbies that are similar. good thing his daughter likes to drink beers though.
