Unless things have changed significantly, practices are usually a morning and afternoon practice for the first couple of weeks. They take place at one of the various practice fields around campus. If you wanted to watch, I imagine it would mean simply going and staying out of the way. They usually have some sort of scrimmage or live D v. O setups on the weekends with an official Fall Scrimmage to shore up the playbook and roster competitions at the end of fall camp. If you're thinking of the best time to show up for any individual practice, usually the end of the practice when there are some 7 on 7 or team drills (like goal line situations, 2 minute drills, etc). Afternoon sessions usually involve more team drills, but may be half-pads or no-pads depending on the schedule, so it wouldn't mean as much full contact drills. (Full disclosure: the only difference between half-pad practices and full-pad practices is you're wearing shorts for half-pads so your knees are exposed for some grass stains/burns and it's easier to run with just shorts on. You still have plenty of opportunities to see guys giving each other mush-head with contact drills if watching a half-pad practice.)
